Ingredients
- Large potatoes - 2 pcs (about 300g each)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Red bell pepper - 1/2 cup, diced
- Green bell pepper - 1/2 cup, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cherry tomatoes - 1/2 cup, halved
- Corn - 1/2 cup (canned or frozen)
- Cheddar cheese - 1/2 cup, shredded (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the potatoes thoroughly, then pierce them multiple times with a fork.
- Rub the potatoes with olive oil, salt, and black pepper, then place them directly on the oven rack.
- Bake the potatoes for about 30-35 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, heat a tablespoon of olive oil in a skillet over medium heat.
- Add the chopped onion and garlic; sauté until soft and translucent, about 3-4 minutes.
- Add the diced red and green bell peppers, and cook for another 5 minutes until they soften.
- Stir in the halved cherry tomatoes and corn, and season with paprika and additional salt and pepper to taste. Cook for an additional 3-4 minutes until everything is heated through.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut each potato in half lengthwise and scoop out some of the flesh to create a hollow.
- Mix the scooped-out potato flesh with the sautéed vegetable mixture and cheese if using.
- Fill the hollowed-out potato skins with the vegetable mixture, packing it in gently.
- Return the stuffed potatoes to the oven for an additional 5-7 minutes until heated through and slightly crispy on top.
- Garnish with chopped fresh parsley before serving.
