Ingredients

  • Large potatoes - 2 pcs (about 300g each)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Red bell pepper - 1/2 cup, diced
  • Green bell pepper - 1/2 cup, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 1/2 cup, halved
  • Corn - 1/2 cup (canned or frozen)
  • Cheddar cheese - 1/2 cup, shredded (optional)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes thoroughly, then pierce them multiple times with a fork.
  3. Rub the potatoes with olive oil, salt, and black pepper, then place them directly on the oven rack.
  4. Bake the potatoes for about 30-35 minutes, or until they are tender when pierced with a fork.
  5. While the potatoes are baking, heat a tablespoon of olive oil in a skillet over medium heat.
  6. Add the chopped onion and garlic; sauté until soft and translucent, about 3-4 minutes.
  7. Add the diced red and green bell peppers, and cook for another 5 minutes until they soften.
  8. Stir in the halved cherry tomatoes and corn, and season with paprika and additional salt and pepper to taste. Cook for an additional 3-4 minutes until everything is heated through.
  9. Once the potatoes are done, remove them from the oven and let them cool slightly.
  10. Cut each potato in half lengthwise and scoop out some of the flesh to create a hollow.
  11. Mix the scooped-out potato flesh with the sautéed vegetable mixture and cheese if using.
  12. Fill the hollowed-out potato skins with the vegetable mixture, packing it in gently.
  13. Return the stuffed potatoes to the oven for an additional 5-7 minutes until heated through and slightly crispy on top.
  14. Garnish with chopped fresh parsley before serving.
