Ingredients

  • Large potatoes - 2
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Green bell pepper - 1, diced
  • Tomato - 1 medium, diced
  • Tomato paste - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Oregano - 1/2 teaspoon
  • Cheddar cheese - 100 grams, grated
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and pierce them several times with a fork. Wrap each potato in aluminum foil and bake in the preheated oven for 45-50 minutes, or until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, and sauté until fragrant and golden brown, about 3-4 minutes.
  4. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the diced green bell pepper and tomato, and cook for another 3-4 minutes until the vegetables are softened.
  6. Add the tomato paste, salt, black pepper, paprika, and oregano. Mix well and let it simmer for another 5 minutes.
  7. Once the potatoes are done, carefully remove them from the oven and let them cool slightly. Cut each potato lengthwise and gently fluff the insides with a fork.
  8. Spoon the beef mixture generously into each potato. Top with grated cheddar cheese.
  9. Return the stuffed potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley before serving.
