- Green bell pepper - 1, diced
- Tomato - 1 medium, diced
- Tomato paste - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Oregano - 1/2 teaspoon
- Cheddar cheese - 100 grams, grated
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and pierce them several times with a fork. Wrap each potato in aluminum foil and bake in the preheated oven for 45-50 minutes, or until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, and sauté until fragrant and golden brown, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the diced green bell pepper and tomato, and cook for another 3-4 minutes until the vegetables are softened.
- Add the tomato paste, salt, black pepper, paprika, and oregano. Mix well and let it simmer for another 5 minutes.
- Once the potatoes are done, carefully remove them from the oven and let them cool slightly. Cut each potato lengthwise and gently fluff the insides with a fork.
- Spoon the beef mixture generously into each potato. Top with grated cheddar cheese.
- Return the stuffed potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
