- Potatoes - 2 large
- Ground turkey - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1/2, finely chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Cucumber - 1/2, diced
- Tomato - 1, diced
- Fresh parsley - a handful, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly and poke a few holes in each with a fork. Bake in the oven for about 45 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
- Add the ground turkey, red bell pepper, cumin, paprika, salt, and black pepper to the skillet. Cook until the turkey is browned and cooked through, about 8-10 minutes.
- In a bowl, mix the Greek yogurt with lemon juice, and season with salt to taste.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them open and fluff the insides with a fork.
- Stuff each potato with the turkey mixture, then top with diced cucumber, tomato, and chopped parsley.
- Drizzle the yogurt sauce over the top and serve immediately.
