Ingredients

  • Potatoes - 2 large
  • Ground turkey - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1/2, finely chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Cucumber - 1/2, diced
  • Tomato - 1, diced
  • Fresh parsley - a handful, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and poke a few holes in each with a fork. Bake in the oven for about 45 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
  4. Add the ground turkey, red bell pepper, cumin, paprika, salt, and black pepper to the skillet. Cook until the turkey is browned and cooked through, about 8-10 minutes.
  5. In a bowl, mix the Greek yogurt with lemon juice, and season with salt to taste.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them open and fluff the insides with a fork.
  7. Stuff each potato with the turkey mixture, then top with diced cucumber, tomato, and chopped parsley.
  8. Drizzle the yogurt sauce over the top and serve immediately.
