- Large potatoes - 2
- Fresh spinach - 200 grams
- Feta cheese - 100 grams, crumbled
- Greek yogurt - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red chili flakes - 1/4 teaspoon (optional)
- Parmesan cheese - 50 grams, grated
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them several times with a fork. Wrap each potato in aluminum foil and bake in the preheated oven for 45-50 minutes, or until tender.
- While the potatoes are baking, heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add fresh spinach to the pan and cook until wilted, about 3-4 minutes. Season with salt, black pepper, and red chili flakes (if using).
- Remove the pan from heat and stir in crumbled feta cheese and Greek yogurt until well combined.
- Once the potatoes are done, remove them from the oven and carefully unwrap the foil. Cut each potato in half lengthwise and fluff the insides with a fork.
- Spoon the spinach and cheese mixture generously over the fluffed potato halves.
- Sprinkle grated Parmesan cheese on top of each potato and return to the oven for an additional 5-7 minutes, until the cheese is melted and golden.
- Remove from the oven, garnish with chopped parsley, and serve hot.
