Ingredients

  • Large potatoes - 2
  • Fresh spinach - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Greek yogurt - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red chili flakes - 1/4 teaspoon (optional)
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them several times with a fork. Wrap each potato in aluminum foil and bake in the preheated oven for 45-50 minutes, or until tender.
  3. While the potatoes are baking, heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add fresh spinach to the pan and cook until wilted, about 3-4 minutes. Season with salt, black pepper, and red chili flakes (if using).
  5. Remove the pan from heat and stir in crumbled feta cheese and Greek yogurt until well combined.
  6. Once the potatoes are done, remove them from the oven and carefully unwrap the foil. Cut each potato in half lengthwise and fluff the insides with a fork.
  7. Spoon the spinach and cheese mixture generously over the fluffed potato halves.
  8. Sprinkle grated Parmesan cheese on top of each potato and return to the oven for an additional 5-7 minutes, until the cheese is melted and golden.
  9. Remove from the oven, garnish with chopped parsley, and serve hot.
