- Cooked chickpeas - 100 grams
- Grated carrots - 50 grams
- Chopped green bell pepper - 50 grams
- Chopped red onion - 30 grams
- Corn kernels - 50 grams
- Plain yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Chopped parsley - 2 tablespoons
- Feta cheese - 50 grams
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and pierce them several times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for about 45-50 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, prepare the filling. In a mixing bowl, combine cooked chickpeas, grated carrots, chopped green bell pepper, chopped red onion, corn kernels, and chopped parsley.
- In a small bowl, mix the plain yogurt with lemon juice, salt, and black pepper to taste.
- Once the potatoes are done baking, remove them from the oven and let them cool slightly.
- Cut each potato lengthwise and gently scoop out some of the flesh to create space for the filling.
- Fill each potato with the chickpea mixture, then drizzle the yogurt sauce over the top.
- Finish with crumbled feta cheese and serve immediately.
