Ingredients

  • Large potatoes - 2
  • Fresh anchovies - 200 grams
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Wash and scrub the potatoes, then prick them with a fork. Bake in the oven for about 45 minutes or until tender.
  3. While the potatoes are baking, heat olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  4. Add the diced red and green bell peppers to the pan and cook for another 5 minutes until softened.
  5. Add the fresh anchovies to the pan and cook until they are just cooked through, about 3-4 minutes. Season with salt, black pepper, and lemon juice. Mix well.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut the potatoes in half lengthwise and scoop out some of the flesh to create space for the filling.
  7. Mix the scooped potato flesh with the anchovy mixture and chopped parsley, then spoon the filling back into the potato skins.
  8. Return the stuffed potatoes to the oven for another 10 minutes to heat through and slightly crisp the tops.
  9. Serve hot, garnished with extra parsley if desired.
