Ingredients

  • Large baking potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper - 1/2, diced
  • Zucchini - 1/2, diced
  • Corn - 1/2 cup, cooked
  • Black beans - 1/2 cup, canned and rinsed
  • Feta cheese - 100 grams, crumbled
  • Greek yogurt - 4 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Chili flakes - 1/4 teaspoon (optional)
  • Burger buns - 2

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the baking potatoes thoroughly, then prick them several times with a fork. Rub with olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, heat a skillet over medium heat. Add a tablespoon of olive oil and sauté the diced red bell pepper and zucchini for about 5-7 minutes until they are soft.
  5. In a mixing bowl, combine the sautéed vegetables, cooked corn, black beans, crumbled feta cheese, and black pepper. Mix well and set aside.
  6. Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving enough to maintain the potato's structure.
  7. Mash the scooped potato flesh in a bowl and mix it with the vegetable and cheese filling. Adjust seasoning with salt and chili flakes if desired.
  8. Spoon the filling back into the potato skins, packing it tightly. Return to the oven for an additional 10 minutes to heat through.
  9. While the filled potatoes are in the oven, toast the burger buns lightly.
  10. To assemble, place the filled potato on the bottom half of each toasted bun, top with a dollop of Greek yogurt and sprinkle with fresh parsley. Cover with the top half of the bun and serve immediately.
