- Large potatoes - 2
- Broccoli florets - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cheddar cheese - 100 grams, grated
- Mozzarella cheese - 100 grams, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and poke several holes in them with a fork. Wrap them in aluminum foil and bake for 45-50 minutes until tender.
- While the potatoes are baking, bring a pot of water to a boil. Add the broccoli florets and cook for 5-7 minutes until tender. Drain and set aside.
- In a skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the cooked broccoli to the skillet, and stir in the salt, black pepper, and paprika. Cook for another 2-3 minutes, then remove from heat.
- When the potatoes are done, remove them from the oven and carefully unwrap them. Cut each potato in half lengthwise and scoop out a bit of the flesh to create a well.
- Mix the scooped potato flesh with the sautéed broccoli mixture and half of each type of cheese.
- Fill the potato halves with the broccoli and cheese mixture, then top with the remaining cheeses.
- Place the stuffed potatoes back in the oven for an additional 10-15 minutes until the cheese is bubbly and golden.
- Remove from the oven, garnish with fresh parsley, and serve hot.
