Ingredients

  • Large potatoes - 2
  • Broccoli florets - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cheddar cheese - 100 grams, grated
  • Mozzarella cheese - 100 grams, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and poke several holes in them with a fork. Wrap them in aluminum foil and bake for 45-50 minutes until tender.
  3. While the potatoes are baking, bring a pot of water to a boil. Add the broccoli florets and cook for 5-7 minutes until tender. Drain and set aside.
  4. In a skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
  5. Add the cooked broccoli to the skillet, and stir in the salt, black pepper, and paprika. Cook for another 2-3 minutes, then remove from heat.
  6. When the potatoes are done, remove them from the oven and carefully unwrap them. Cut each potato in half lengthwise and scoop out a bit of the flesh to create a well.
  7. Mix the scooped potato flesh with the sautéed broccoli mixture and half of each type of cheese.
  8. Fill the potato halves with the broccoli and cheese mixture, then top with the remaining cheeses.
  9. Place the stuffed potatoes back in the oven for an additional 10-15 minutes until the cheese is bubbly and golden.
  10. Remove from the oven, garnish with fresh parsley, and serve hot.
