Ingredients
- Large potatoes - 2
- White fish fillets (such as cod or haddock) - 200 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic (minced) - 1 clove
- Red bell pepper (diced) - 1 small
- Green onions (chopped) - 2 stalks
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - 2 tablespoons
- Cherry tomatoes (halved) - 100 grams
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly, then prick them with a fork several times and wrap them in aluminum foil.
- Place the wrapped potatoes directly on the oven rack and bake for about 45 minutes, or until tender.
- While the potatoes are baking, prepare the fish filling. In a pan, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the fish fillets and cook for about 4-5 minutes on each side until cooked through.
- Remove the fish from the pan, flake it into pieces, and set it aside.
- In the same pan, add the diced red bell pepper and cook for 3-4 minutes until softened.
- Add the flaked fish back to the pan along with green onions, salt, black pepper, and lemon juice. Mix well and cook for another 2 minutes.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh to make room for the filling.
- Fill each potato half with the fish and vegetable mixture, topping with cherry tomatoes and chopped parsley.
- Serve immediately and enjoy your Kumpir Balık!
