Ingredients

  • Large Russet potatoes - 2
  • Unsalted butter - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cheddar cheese, shredded - 100 grams
  • Sour cream - 100 grams
  • Cooked corn - 100 grams
  • Pickled cucumbers, diced - 50 grams
  • Kalamata olives, pitted and chopped - 50 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Red bell pepper, diced - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them several times with a fork to allow steam to escape.
  3. Rub the potatoes with a little olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for 60-70 minutes, or until the skin is crispy and a fork easily pierces through the flesh.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly.
  6. Carefully cut the potatoes lengthwise down the middle and gently scoop out some of the flesh, leaving enough to keep the shape.
  7. In a bowl, mix the scooped potato flesh with butter, black pepper, cheddar cheese, and sour cream until well combined.
  8. Spoon the mixture back into the potato skins.
  9. Top the stuffed potatoes with cooked corn, diced pickled cucumbers, chopped olives, parsley, and diced red bell pepper.
  10. Return the stuffed potatoes to the oven for an additional 5-10 minutes to melt the cheese and warm the toppings before serving.
