Ingredients

  • Large baking potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper - 1/2 cup, diced
  • Green bell pepper - 1/2 cup, diced
  • Cherry tomatoes - 1/2 cup, halved
  • Cucumber - 1/2 cup, diced
  • Kalamata olives - 1/4 cup, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Vegan yogurt - 4 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the baking potatoes thoroughly and prick them multiple times with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt and black pepper.
  4. Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until they are tender and can be easily pierced with a fork.
  5. While the potatoes are baking, prepare the vegetable toppings by dicing the red and green bell peppers, cucumber, and halving the cherry tomatoes.
  6. In a bowl, combine the diced vegetables, Kalamata olives, and chopped parsley. Add lemon juice and mix well.
  7. Once the potatoes are done, remove them from the oven and let them cool slightly before cutting them open lengthwise.
  8. Scoop out some of the potato flesh to create space for the toppings, then mash it lightly with a fork.
  9. Top each potato with the vegetable mixture, a dollop of vegan yogurt, and additional parsley if desired.
