- Large baking potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red bell pepper - 1/2 cup, diced
- Green bell pepper - 1/2 cup, diced
- Cherry tomatoes - 1/2 cup, halved
- Cucumber - 1/2 cup, diced
- Kalamata olives - 1/4 cup, sliced
- Fresh parsley - 2 tablespoons, chopped
- Vegan yogurt - 4 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash the baking potatoes thoroughly and prick them multiple times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt and black pepper.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until they are tender and can be easily pierced with a fork.
- While the potatoes are baking, prepare the vegetable toppings by dicing the red and green bell peppers, cucumber, and halving the cherry tomatoes.
- In a bowl, combine the diced vegetables, Kalamata olives, and chopped parsley. Add lemon juice and mix well.
- Once the potatoes are done, remove them from the oven and let them cool slightly before cutting them open lengthwise.
- Scoop out some of the potato flesh to create space for the toppings, then mash it lightly with a fork.
- Top each potato with the vegetable mixture, a dollop of vegan yogurt, and additional parsley if desired.
