Kuşbaşılı Pide

Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Lamb or beef (diced) - 200 grams
- Onion (finely chopped) - 1 medium
- Green bell pepper (finely chopped) - 1/2
- Tomato (diced) - 1 medium
- Red pepper flakes - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - to taste
- Parsley (chopped) - 1 tablespoon
- Yogurt (for serving) - optional
Steps
- In a bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture along with olive oil.
- Knead the dough for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the filling. In a skillet over medium heat, sauté the chopped onions until translucent.
- Add the diced meat to the skillet and cook until browned. Stir in green bell pepper, tomato, red pepper flakes, black pepper, and salt. Cook for another 5 minutes, then remove from heat and mix in chopped parsley.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape on a floured surface, about 0.5 cm thick.
- Evenly distribute the meat filling along the center of each oval, leaving a border around the edges.
- Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal.
- Transfer the pide to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Remove from the oven and let it cool slightly before serving. Serve warm with yogurt on the side if desired.
