Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Lamb or beef (diced) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Green bell pepper (finely chopped) - 1/2
  • Tomato (diced) - 1 medium
  • Red pepper flakes - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - to taste
  • Parsley (chopped) - 1 tablespoon
  • Yogurt (for serving) - optional

Steps

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture along with olive oil.
  3. Knead the dough for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the filling. In a skillet over medium heat, sauté the chopped onions until translucent.
  5. Add the diced meat to the skillet and cook until browned. Stir in green bell pepper, tomato, red pepper flakes, black pepper, and salt. Cook for another 5 minutes, then remove from heat and mix in chopped parsley.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape on a floured surface, about 0.5 cm thick.
  8. Evenly distribute the meat filling along the center of each oval, leaving a border around the edges.
  9. Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal.
  10. Transfer the pide to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  11. Remove from the oven and let it cool slightly before serving. Serve warm with yogurt on the side if desired.
