Ingredients

  • Celery - 1 stalk, diced
  • Zucchini - 1 small, diced
  • Spinach - 100 grams, fresh
  • Vegetable broth - 500 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-5 minutes.
  3. Stir in the diced carrot and celery, cooking for another 5 minutes until they start to soften.
  4. Add the diced zucchini and continue to cook for another 3 minutes.
