- Celery - 1 stalk, diced
- Zucchini - 1 small, diced
- Spinach - 100 grams, fresh
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-5 minutes.
- Stir in the diced carrot and celery, cooking for another 5 minutes until they start to soften.
- Add the diced zucchini and continue to cook for another 3 minutes.
