Ingredients

  • Artichokes - 2 medium-sized, cleaned and halved
  • Extra virgin olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 ml

Steps

  1. In a large saucepan, heat 2 tablespoons of olive oil over medium heat.
  2. Add minced garlic to the saucepan and sauté for about 1 minute until fragrant.
  3. Carefully add the halved artichokes to the pan, cut side down, and cook for 5 minutes until they start to brown.
  4. Pour in the water, lemon juice, salt, and black pepper. Cover the pan and let it simmer for about 15 minutes until the artichokes are tender.
  5. Once the artichokes are cooked, remove the lid and drizzle the remaining 2 tablespoons of olive oil over them.
  6. Sprinkle chopped parsley on top for garnish and serve warm.
