Ingredients

  • Coconut milk - 200 ml
  • Almond flour - 2 tablespoons
  • Erythritol - 2 tablespoons
  • Gelatin powder - 1 teaspoon
  • Water - 50 ml (for gelatin)
  • Saffron strands - a pinch
  • Vanilla extract - 1/2 teaspoon
  • Chopped pistachios - 1 tablespoon (for garnish)

Steps

  1. In a small bowl, sprinkle the gelatin powder over 50 ml of water and let it bloom for about 5 minutes.
  2. In a saucepan, combine the coconut milk, almond flour, erythritol, and vanilla extract. Heat over medium heat, stirring constantly until the mixture is warm but not boiling.
  3. Add the bloomed gelatin to the warm coconut mixture and stir until fully dissolved.
  4. Add the saffron strands to the mixture and stir well. Cook for another 2-3 minutes on low heat to allow the flavors to meld.
  5. Remove from heat and pour the mixture into serving bowls or ramekins. Let it cool to room temperature, then refrigerate for at least 1 hour until set.
  6. Before serving, garnish with chopped pistachios.
