Ingredients
- Coconut milk - 200 ml
- Almond flour - 2 tablespoons
- Erythritol - 2 tablespoons
- Gelatin powder - 1 teaspoon
- Water - 50 ml (for gelatin)
- Saffron strands - a pinch
- Vanilla extract - 1/2 teaspoon
- Chopped pistachios - 1 tablespoon (for garnish)
Steps
- In a small bowl, sprinkle the gelatin powder over 50 ml of water and let it bloom for about 5 minutes.
- In a saucepan, combine the coconut milk, almond flour, erythritol, and vanilla extract. Heat over medium heat, stirring constantly until the mixture is warm but not boiling.
- Add the bloomed gelatin to the warm coconut mixture and stir until fully dissolved.
- Add the saffron strands to the mixture and stir well. Cook for another 2-3 minutes on low heat to allow the flavors to meld.
- Remove from heat and pour the mixture into serving bowls or ramekins. Let it cool to room temperature, then refrigerate for at least 1 hour until set.
- Before serving, garnish with chopped pistachios.
