Ingredients

  • Greek yogurt - 200 grams
  • Chicken or vegetable broth - 500 ml
  • Egg - 1 large
  • Fresh mint - 2 tablespoons, chopped
  • Fresh dill - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a medium saucepan, heat the chicken or vegetable broth over medium heat until it simmers.
  2. In a bowl, whisk together the Greek yogurt and the egg until well combined.
  3. Slowly add a ladleful of the hot broth to the yogurt mixture, whisking continuously to temper the yogurt and prevent curdling.
  4. Gradually pour the tempered yogurt mixture back into the saucepan with the remaining broth, stirring constantly.
  5. Add the minced garlic, chopped mint, chopped dill, salt, and black pepper to the soup.
  6. Lower the heat and let the soup simmer for about 10 minutes, stirring occasionally.
  7. Drizzle the olive oil over the soup just before serving and garnish with extra herbs if desired.
