- Greek yogurt - 200 grams
- Chicken or vegetable broth - 500 ml
- Egg - 1 large
- Fresh mint - 2 tablespoons, chopped
- Fresh dill - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a medium saucepan, heat the chicken or vegetable broth over medium heat until it simmers.
- In a bowl, whisk together the Greek yogurt and the egg until well combined.
- Slowly add a ladleful of the hot broth to the yogurt mixture, whisking continuously to temper the yogurt and prevent curdling.
- Gradually pour the tempered yogurt mixture back into the saucepan with the remaining broth, stirring constantly.
- Add the minced garlic, chopped mint, chopped dill, salt, and black pepper to the soup.
- Lower the heat and let the soup simmer for about 10 minutes, stirring occasionally.
- Drizzle the olive oil over the soup just before serving and garnish with extra herbs if desired.
