- Tomato - 1 medium, diced
- Red bell pepper - 1/2, diced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
Steps
- Wash the green beans and trim the ends, then cut them into 2-3 inch pieces.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the diced tomato and red bell pepper, cooking for another 3-4 minutes until the vegetables soften.
- Add the green beans to the skillet, followed by the salt, black pepper, and cumin. Mix well to combine.
- Pour in the vegetable broth, bring to a simmer, and cover the skillet. Cook for 15-20 minutes until the green beans are tender.
