  • Tomato - 1 medium, diced
  • Red bell pepper - 1/2, diced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Wash the green beans and trim the ends, then cut them into 2-3 inch pieces.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the diced tomato and red bell pepper, cooking for another 3-4 minutes until the vegetables soften.
  5. Add the green beans to the skillet, followed by the salt, black pepper, and cumin. Mix well to combine.
