- Chicken breast - 200 grams
- Chicken broth - 500 ml
- Coconut oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Dried oregano - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
Steps
- In a medium-sized pot, heat the coconut oil over medium heat.
- Add the diced onion, garlic, carrot, and celery to the pot and sauté for about 5 minutes until softened.
- Cut the chicken breast into bite-sized pieces and add them to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat to low and add the dried oregano, black pepper, and salt. Let it simmer for 15 minutes until the chicken is cooked through.
- Once cooked, remove from heat and stir in the fresh parsley and lemon juice.
- Serve hot, garnished with additional parsley if desired.
