Ingredients

  • Chicken breast - 200 grams
  • Chicken broth - 500 ml
  • Coconut oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Carrot - 1 small, diced
  • Celery - 1 stalk, diced
  • Dried oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium-sized pot, heat the coconut oil over medium heat.
  2. Add the diced onion, garlic, carrot, and celery to the pot and sauté for about 5 minutes until softened.
  3. Cut the chicken breast into bite-sized pieces and add them to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Reduce the heat to low and add the dried oregano, black pepper, and salt. Let it simmer for 15 minutes until the chicken is cooked through.
  6. Once cooked, remove from heat and stir in the fresh parsley and lemon juice.
  7. Serve hot, garnished with additional parsley if desired.
