- Cherry tomatoes - 100 grams, halved
- Bell pepper - 1 medium, cubed
- Zucchini - 1 medium, sliced
- Parsley - 2 tablespoons, chopped
Steps
- Cut the chicken breast into bite-sized cubes and place them in a bowl.
- In a separate bowl, mix olive oil, Greek yogurt, minced garlic, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.
- Pour the marinade over the chicken cubes, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by halving the cherry tomatoes, cubing the bell pepper, and slicing the zucchini.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken, cherry tomatoes, bell pepper, and zucchini onto skewers, alternating between the ingredients.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and sprinkle with chopped parsley before serving.
