Ingredients

  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 1 medium, cubed
  • Zucchini - 1 medium, sliced
  • Parsley - 2 tablespoons, chopped

Steps

  1. Cut the chicken breast into bite-sized cubes and place them in a bowl.
  2. In a separate bowl, mix olive oil, Greek yogurt, minced garlic, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.
  3. Pour the marinade over the chicken cubes, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  4. While the chicken is marinating, prepare the vegetables by halving the cherry tomatoes, cubing the bell pepper, and slicing the zucchini.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated chicken, cherry tomatoes, bell pepper, and zucchini onto skewers, alternating between the ingredients.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  8. Remove from the grill and sprinkle with chopped parsley before serving.
