- Chicken breast - 200 grams
- Coconut milk - 200 ml
- Erythritol sweetener - 3 tablespoons
- Vanilla extract - 1 teaspoon
- Gelatin powder - 1 tablespoon
- Water - 50 ml
- Almond flour - 2 tablespoons
- Salt - a pinch
Steps
- In a pot, boil the chicken breast in water until fully cooked, about 15 minutes. Remove and let it cool before shredding.
- In a separate bowl, dissolve the gelatin powder in 50 ml of warm water and set aside.
- In a saucepan, combine the coconut milk, erythritol, vanilla extract, and a pinch of salt. Heat gently until the erythritol dissolves.
- Add the shredded chicken and almond flour to the coconut mixture and stir well to combine.
- Incorporate the dissolved gelatin into the mixture and stir until completely blended.
- Pour the mixture into a serving dish or two ramekins and refrigerate for about 2 hours, or until set.
