Ingredients

  • Chicken breast - 200 grams
  • Coconut milk - 200 ml
  • Erythritol sweetener - 3 tablespoons
  • Vanilla extract - 1 teaspoon
  • Gelatin powder - 1 tablespoon
  • Water - 50 ml
  • Almond flour - 2 tablespoons
  • Salt - a pinch

Steps

  1. In a pot, boil the chicken breast in water until fully cooked, about 15 minutes. Remove and let it cool before shredding.
  2. In a separate bowl, dissolve the gelatin powder in 50 ml of warm water and set aside.
  3. In a saucepan, combine the coconut milk, erythritol, vanilla extract, and a pinch of salt. Heat gently until the erythritol dissolves.
  4. Add the shredded chicken and almond flour to the coconut mixture and stir well to combine.
  5. Incorporate the dissolved gelatin into the mixture and stir until completely blended.
  6. Pour the mixture into a serving dish or two ramekins and refrigerate for about 2 hours, or until set.
  7. Serve chilled, optionally garnished with a sprinkle of unsweetened cocoa or shredded coconut.
