Ingredients
- Lamb shoulder - 300 grams, sliced thinly
- Zucchini - 2 medium, spiralized into noodles
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Greek yogurt - 100 grams
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the sliced lamb, and season with cumin, paprika, salt, and black pepper. Cook until the lamb is browned and cooked through, about 8-10 minutes.
- While the lamb is cooking, prepare the zucchini noodles in a separate pan on medium heat with a drizzle of olive oil. Sauté for 2-3 minutes until slightly tender.
- To serve, place a portion of the zucchini noodles on each plate, top with the spiced lamb, and drizzle with Greek yogurt.
