Ingredients

  • Lamb shoulder - 300 grams, sliced thinly
  • Zucchini - 2 medium, spiralized into noodles
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Greek yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. In a large skillet, heat the olive oil and butter over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the sliced lamb, and season with cumin, paprika, salt, and black pepper. Cook until the lamb is browned and cooked through, about 8-10 minutes.
  4. While the lamb is cooking, prepare the zucchini noodles in a separate pan on medium heat with a drizzle of olive oil. Sauté for 2-3 minutes until slightly tender.
  5. To serve, place a portion of the zucchini noodles on each plate, top with the spiced lamb, and drizzle with Greek yogurt.
  6. Garnish with chopped parsley and serve immediately.
