Ingredients
- Zucchini - 100 grams
- Cauliflower - 100 grams
- Spinach - 50 grams
- Bell Pepper (red) - 50 grams
- Onion - 50 grams
- Garlic - 2 cloves
- Olive Oil - 1 tablespoon
- Vegetable Broth - 500 ml
- Salt - to taste
- Black Pepper - to taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Lemon Juice - 1 tablespoon
Steps
- Wash and chop the zucchini, cauliflower, bell pepper, and spinach into small pieces.
- Finely chop the onion and garlic.
- In a pot, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the chopped zucchini, cauliflower, and bell pepper to the pot and sauté for 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and add the spinach, salt, black pepper, paprika, and cumin. Simmer for 15 minutes until the vegetables are tender.
- Remove from heat, stir in the lemon juice, and blend the soup until smooth using an immersion blender or regular blender.
- Serve warm, garnished with a drizzle of olive oil if desired.
