Ingredients

  • Zucchini - 100 grams
  • Cauliflower - 100 grams
  • Spinach - 50 grams
  • Bell Pepper (red) - 50 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Olive Oil - 1 tablespoon
  • Vegetable Broth - 500 ml
  • Salt - to taste
  • Black Pepper - to taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Lemon Juice - 1 tablespoon

Steps

  1. Wash and chop the zucchini, cauliflower, bell pepper, and spinach into small pieces.
  2. Finely chop the onion and garlic.
  3. In a pot, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Add the chopped zucchini, cauliflower, and bell pepper to the pot and sauté for 5 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat and add the spinach, salt, black pepper, paprika, and cumin. Simmer for 15 minutes until the vegetables are tender.
  7. Remove from heat, stir in the lemon juice, and blend the soup until smooth using an immersion blender or regular blender.
  8. Serve warm, garnished with a drizzle of olive oil if desired.
