Keto Sütlaç is a low-carb version of the traditional Turkish rice pudding, beautifully creamy and flavored with vanilla. This delightful dessert is perfect for anyone following a ketogenic diet, providing a satisfying sweet treat without the carbs.

Ingredients
- Cauliflower rice - 200 grams
- Unsweetened almond milk - 400 ml
- Erythritol or stevia - 2 tablespoons (adjust to taste)
- Vanilla extract - 1 teaspoon
- Egg yolk - 1 large
- Coconut cream - 2 tablespoons
- Cinnamon - 1/2 teaspoon (for garnish)
- Chopped nuts (optional) - 1 tablespoon
Steps
- In a saucepan over medium heat, combine the cauliflower rice and almond milk. Cook for 10-15 minutes, stirring occasionally, until the cauliflower is soft.
- Add erythritol (or stevia) and vanilla extract, mixing well. Continue to cook for another 5 minutes.
- In a small bowl, whisk the egg yolk and coconut cream together until smooth. Gradually add a few tablespoons of the hot cauliflower mixture to temper the egg yolk, then pour it back into the saucepan.
- Stir continuously for another 5 minutes until the mixture thickens to a pudding-like consistency. Remove from heat.
- Divide the Keto Sütlaç into two serving dishes and let it cool slightly before refrigerating for at least 1 hour.
- Before serving, sprinkle with cinnamon and top with chopped nuts if desired.
