Ingredients

  • Cauliflower rice - 200 grams
  • Unsweetened almond milk - 400 ml
  • Erythritol or stevia - 2 tablespoons (adjust to taste)
  • Vanilla extract - 1 teaspoon
  • Egg yolk - 1 large
  • Coconut cream - 2 tablespoons
  • Cinnamon - 1/2 teaspoon (for garnish)
  • Chopped nuts (optional) - 1 tablespoon

Steps

  1. In a saucepan over medium heat, combine the cauliflower rice and almond milk. Cook for 10-15 minutes, stirring occasionally, until the cauliflower is soft.
  2. Add erythritol (or stevia) and vanilla extract, mixing well. Continue to cook for another 5 minutes.
  3. In a small bowl, whisk the egg yolk and coconut cream together until smooth. Gradually add a few tablespoons of the hot cauliflower mixture to temper the egg yolk, then pour it back into the saucepan.
  4. Stir continuously for another 5 minutes until the mixture thickens to a pudding-like consistency. Remove from heat.
  5. Divide the Keto Sütlaç into two serving dishes and let it cool slightly before refrigerating for at least 1 hour.
  6. Before serving, sprinkle with cinnamon and top with chopped nuts if desired.
