Ingredients

  • Almond flour - 100 grams
  • Granulated erythritol - 50 grams
  • Baking powder - 1 teaspoon
  • Eggs - 2 large
  • Greek yogurt - 50 grams
  • Lemon zest - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Unsalted butter - 30 grams, melted
  • Water - 200 ml
  • Lemon juice - 30 ml
  • Stevia - to taste (optional)

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish.
  2. In a mixing bowl, combine almond flour, erythritol, and baking powder.
  3. In another bowl, whisk together the eggs, Greek yogurt, melted butter, lemon zest, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients, mixing until fully combined.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake in the preheated oven for 25-30 minutes or until golden brown and a toothpick comes out clean.
  7. While the cake is baking, prepare the syrup by combining water, lemon juice, and stevia in a small saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
  8. Once the cake is done, remove it from the oven and immediately pour the syrup over the hot cake.
  9. Let the cake cool for at least 10 minutes before slicing and serving.
