- Almond flour - 100 grams
- Granulated erythritol - 50 grams
- Baking powder - 1 teaspoon
- Eggs - 2 large
- Greek yogurt - 50 grams
- Lemon zest - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Unsalted butter - 30 grams, melted
- Water - 200 ml
- Lemon juice - 30 ml
- Stevia - to taste (optional)
Steps
- Preheat your oven to 180°C (350°F) and grease a small baking dish.
- In a mixing bowl, combine almond flour, erythritol, and baking powder.
- In another bowl, whisk together the eggs, Greek yogurt, melted butter, lemon zest, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet ingredients, mixing until fully combined.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake in the preheated oven for 25-30 minutes or until golden brown and a toothpick comes out clean.
- While the cake is baking, prepare the syrup by combining water, lemon juice, and stevia in a small saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Once the cake is done, remove it from the oven and immediately pour the syrup over the hot cake.
- Let the cake cool for at least 10 minutes before slicing and serving.
