Ingredients
- Cauliflower - 400 grams
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried thyme - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Remove the leaves and stem from the cauliflower, then cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- In a large skillet, heat the olive oil and butter over medium heat until melted.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the cauliflower rice to the skillet and mix well with the onion and garlic.
- Pour the vegetable broth over the cauliflower rice and season with salt, black pepper, and dried thyme.
- Bring to a simmer, cover the skillet, and reduce the heat to low. Cook for about 10-12 minutes until the cauliflower is tender.
- Remove from heat, fluff the pilav with a fork, and stir in the fresh parsley before serving.
