Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Remove the leaves and stem from the cauliflower, then cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  3. In a large skillet, heat the olive oil and butter over medium heat until melted.
  4. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  5. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  6. Add the cauliflower rice to the skillet and mix well with the onion and garlic.
  7. Pour the vegetable broth over the cauliflower rice and season with salt, black pepper, and dried thyme.
  8. Bring to a simmer, cover the skillet, and reduce the heat to low. Cook for about 10-12 minutes until the cauliflower is tender.
  9. Remove from heat, fluff the pilav with a fork, and stir in the fresh parsley before serving.
