- Shirataki noodles - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Bell pepper - 1/2, diced
- Mushrooms - 100 grams, sliced
- Spinach - 50 grams, fresh
- Chicken breast - 150 grams, cooked and shredded
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated
Steps
- Rinse the Shirataki noodles under cold water and drain them well.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the diced bell pepper and sliced mushrooms to the skillet. Cook for another 5 minutes until the vegetables soften.
- Stir in the shredded chicken, turmeric, paprika, salt, and black pepper. Mix well and cook for an additional 3 minutes.
- Add the rinsed Shirataki noodles and fresh spinach to the skillet. Toss everything together and cook for 2-3 minutes until heated through and the spinach has wilted.
