Ingredients
- Eggplant - 1 medium
- Ground lamb or beef - 300 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat your grill or oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent.
- Add the ground meat to the skillet and cook until browned. Stir in the tomato paste, paprika, cumin, salt, and pepper, cooking for an additional 5 minutes.
- Rinse the eggplant slices to remove excess salt and pat them dry with paper towels.
- Brush both sides of the eggplant slices with the remaining olive oil.
- On the grill or in the oven, grill the eggplant slices for about 4-5 minutes on each side until tender and charred.
- Layer the grilled eggplant in a baking dish, adding the meat mixture on top of each slice.
- Sprinkle crumbled feta cheese and chopped parsley over the top, then return to the oven for another 5 minutes.
- Serve hot, garnished with additional parsley if desired.
