Ingredients

  • Eggplant - 1 medium
  • Ground lamb or beef - 300 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your grill or oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent.
  4. Add the ground meat to the skillet and cook until browned. Stir in the tomato paste, paprika, cumin, salt, and pepper, cooking for an additional 5 minutes.
  5. Rinse the eggplant slices to remove excess salt and pat them dry with paper towels.
  6. Brush both sides of the eggplant slices with the remaining olive oil.
  7. On the grill or in the oven, grill the eggplant slices for about 4-5 minutes on each side until tender and charred.
  8. Layer the grilled eggplant in a baking dish, adding the meat mixture on top of each slice.
  9. Sprinkle crumbled feta cheese and chopped parsley over the top, then return to the oven for another 5 minutes.
  10. Serve hot, garnished with additional parsley if desired.
