Ingredients

  • Leeks - 200 grams, sliced
  • Cauliflower - 150 grams, chopped
  • Garlic - 2 cloves, minced
  • Butter - 30 grams
  • Chicken or vegetable broth - 500 ml
  • Heavy cream - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - for garnish

Steps

  1. Heat the butter and olive oil in a pot over medium heat.
  2. Add the sliced leeks and minced garlic, sautéing until the leeks are soft, about 5 minutes.
  3. Stir in the chopped cauliflower and sauté for another 2-3 minutes.
  4. Pour in the chicken or vegetable broth, bringing the mixture to a boil.
  5. Reduce heat and simmer for 15 minutes, or until the cauliflower is tender.
  6. Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
  7. Stir in the heavy cream, and season with salt and black pepper to taste.
  8. Simmer for an additional 5 minutes to heat through.
  9. Serve hot, garnished with fresh dill.
