- Leeks - 200 grams, sliced
- Cauliflower - 150 grams, chopped
- Garlic - 2 cloves, minced
- Butter - 30 grams
- Chicken or vegetable broth - 500 ml
- Heavy cream - 100 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - for garnish
Steps
- Heat the butter and olive oil in a pot over medium heat.
- Add the sliced leeks and minced garlic, sautéing until the leeks are soft, about 5 minutes.
- Stir in the chopped cauliflower and sauté for another 2-3 minutes.
- Pour in the chicken or vegetable broth, bringing the mixture to a boil.
- Reduce heat and simmer for 15 minutes, or until the cauliflower is tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
- Stir in the heavy cream, and season with salt and black pepper to taste.
- Simmer for an additional 5 minutes to heat through.
- Serve hot, garnished with fresh dill.
