- Cauliflower - 200 grams
- Chicken broth - 500 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Begin by chopping the cauliflower into small florets.
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent, about 3-4 minutes.
- Add the cauliflower florets to the pot and stir for a minute to incorporate them with the onion and garlic.
- Pour in the chicken broth and bring the mixture to a boil. Then reduce the heat and simmer for 15 minutes, or until the cauliflower is tender.
- Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
- Stir in the cumin, paprika, salt, black pepper, and lemon juice. Adjust seasonings to taste.
- Serve hot, garnished with fresh parsley.
