Ingredients

  • Cauliflower - 200 grams
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Begin by chopping the cauliflower into small florets.
  2. In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent, about 3-4 minutes.
  3. Add the cauliflower florets to the pot and stir for a minute to incorporate them with the onion and garlic.
  4. Pour in the chicken broth and bring the mixture to a boil. Then reduce the heat and simmer for 15 minutes, or until the cauliflower is tender.
  5. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
  6. Stir in the cumin, paprika, salt, black pepper, and lemon juice. Adjust seasonings to taste.
  7. Serve hot, garnished with fresh parsley.
