Ingredients

  • Unsweetened almond milk - 400 ml
  • Xylitol or erythritol - 2 tablespoons
  • Gelatin powder - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Cardamom powder - 1/4 teaspoon
  • Salt - a pinch
  • Chopped pistachios (for garnish) - 1 tablespoon

Steps

  1. In a small saucepan, heat the unsweetened almond milk over medium heat until it's warm but not boiling.
  2. Add the xylitol or erythritol, vanilla extract, cardamom powder, and a pinch of salt to the warm almond milk. Stir until the sweetener dissolves completely.
  3. In a separate small bowl, dissolve the gelatin powder in 2 tablespoons of cold water. Let it sit for about 5 minutes until it blooms.
  4. Once the almond milk mixture is warm, add the bloomed gelatin to the saucepan. Stir continuously until the gelatin is fully dissolved.
  5. Remove the saucepan from heat and pour the mixture into two serving cups or bowls.
  6. Allow the muhallebi to cool at room temperature for about 10 minutes, then cover with plastic wrap and refrigerate for at least 2 hours until set.
  7. Before serving, garnish with chopped pistachios.
