Ingredients
- Unsweetened almond milk - 400 ml
- Xylitol or erythritol - 2 tablespoons
- Gelatin powder - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Cardamom powder - 1/4 teaspoon
- Salt - a pinch
- Chopped pistachios (for garnish) - 1 tablespoon
Steps
- In a small saucepan, heat the unsweetened almond milk over medium heat until it's warm but not boiling.
- Add the xylitol or erythritol, vanilla extract, cardamom powder, and a pinch of salt to the warm almond milk. Stir until the sweetener dissolves completely.
- In a separate small bowl, dissolve the gelatin powder in 2 tablespoons of cold water. Let it sit for about 5 minutes until it blooms.
- Once the almond milk mixture is warm, add the bloomed gelatin to the saucepan. Stir continuously until the gelatin is fully dissolved.
- Remove the saucepan from heat and pour the mixture into two serving cups or bowls.
- Allow the muhallebi to cool at room temperature for about 10 minutes, then cover with plastic wrap and refrigerate for at least 2 hours until set.
- Before serving, garnish with chopped pistachios.
