Ingredients

  • Olive oil - 2 tablespoons

  • Green bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, diced
  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced red and green bell peppers to the skillet and sauté for about 5 minutes until they soften.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the diced tomatoes to the skillet and season with salt, black pepper, and red pepper flakes (if using). Cook for about 5-7 minutes until the tomatoes are soft and the mixture is saucy.
  5. Reduce the heat to low and crack the eggs directly into the skillet, gently stirring them into the mixture. Cook until the eggs are just set, about 3-4 minutes.
