- Eggs - 4 large
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced red and green bell peppers to the skillet and sauté for about 5 minutes until they soften.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the diced tomatoes to the skillet and season with salt, black pepper, and red pepper flakes (if using). Cook for about 5-7 minutes until the tomatoes are soft and the mixture is saucy.
- Reduce the heat to low and crack the eggs directly into the skillet, gently stirring them into the mixture. Cook until the eggs are just set, about 3-4 minutes.
- Remove the skillet from heat and sprinkle the crumbled feta cheese and chopped parsley on top before serving.
