Ingredients

  • Zucchini - 300 grams
  • Almond flour - 50 grams
  • Eggs - 2 large
  • Feta cheese - 50 grams, crumbled
  • Parmesan cheese - 30 grams, grated
  • Garlic - 1 clove, minced
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture to ensure the fritters are not soggy.
  2. In a mixing bowl, combine the grated zucchini, almond flour, eggs, crumbled feta cheese, grated Parmesan cheese, minced garlic, chopped dill, salt, and black pepper. Mix until well combined.
  3. Heat olive oil in a frying pan over medium heat. Once hot, spoon about 2 tablespoons of the mixture into the pan for each fritter, flattening them slightly.
  4. Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
  5. Remove the fritters from the pan and place them on a paper towel to absorb excess oil. Serve warm.
