- Zucchini - 300 grams
- Almond flour - 50 grams
- Eggs - 2 large
- Feta cheese - 50 grams, crumbled
- Parmesan cheese - 30 grams, grated
- Garlic - 1 clove, minced
- Fresh dill - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture to ensure the fritters are not soggy.
- In a mixing bowl, combine the grated zucchini, almond flour, eggs, crumbled feta cheese, grated Parmesan cheese, minced garlic, chopped dill, salt, and black pepper. Mix until well combined.
- Heat olive oil in a frying pan over medium heat. Once hot, spoon about 2 tablespoons of the mixture into the pan for each fritter, flattening them slightly.
- Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the pan and place them on a paper towel to absorb excess oil. Serve warm.
