Ingredients
- Zucchini - 2 medium
- Eggs - 4 large
- Greek yogurt (full-fat) - 200 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - for garnish
Steps
- Spiralize the zucchinis to create zucchini noodles and set aside.
- In a small bowl, combine Greek yogurt, minced garlic, salt, and pepper. Mix well and set aside.
- In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the zucchini noodles for about 3-4 minutes until just tender. Remove from heat and set aside.
- In a pot, bring water to a gentle simmer and poach the eggs one at a time for about 3-4 minutes, or until the whites are set but the yolks are still runny.
- In a small skillet, heat the remaining tablespoon of olive oil and add paprika. Stir for about 30 seconds until fragrant.
- To serve, divide the zucchini noodles between two plates, top each with two poached eggs, drizzle with the garlic yogurt sauce, and finish with the paprika oil. Garnish with fresh dill.
