Ingredients

  • Zucchini - 2 medium
  • Eggs - 4 large
  • Greek yogurt (full-fat) - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - for garnish

Steps

  1. Spiralize the zucchinis to create zucchini noodles and set aside.
  2. In a small bowl, combine Greek yogurt, minced garlic, salt, and pepper. Mix well and set aside.
  3. In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the zucchini noodles for about 3-4 minutes until just tender. Remove from heat and set aside.
  4. In a pot, bring water to a gentle simmer and poach the eggs one at a time for about 3-4 minutes, or until the whites are set but the yolks are still runny.
  5. In a small skillet, heat the remaining tablespoon of olive oil and add paprika. Stir for about 30 seconds until fragrant.
  6. To serve, divide the zucchini noodles between two plates, top each with two poached eggs, drizzle with the garlic yogurt sauce, and finish with the paprika oil. Garnish with fresh dill.
