Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Grated Parmesan cheese - 50 grams
  • Ground lamb or beef - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Sliced cucumber - for serving
  • Sliced tomatoes - for serving
  • Lettuce leaves - for serving

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Remove the leaves from the cauliflower and cut it into florets. Steam the florets until tender (about 10-12 minutes), then let cool slightly.
  3. In a food processor, pulse the steamed cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, combine the cauliflower, egg, and grated Parmesan cheese. Mix until well combined. Spread the mixture onto a parchment-lined baking sheet in two round patties, about 1cm thick.
  5. Bake the cauliflower crusts in the preheated oven for about 15-20 minutes, or until golden and firm.
  6. While the crusts are baking, heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until softened (about 3-4 minutes).
  7. Add the ground lamb or beef to the skillet, breaking it up with a spoon. Stir in the tomato paste, paprika, cumin, salt, and black pepper. Cook until the meat is browned and fully cooked (about 8-10 minutes). Mix in chopped parsley.
  8. Once the cauliflower crusts are done, remove them from the oven and spoon the meat mixture evenly over each crust.
  9. Return the burgers to the oven for an additional 5 minutes to heat through.
  10. Serve the Keto Lahmacun Burgers on lettuce leaves, topped with sliced cucumber and tomatoes.
