Ingredients
- Cauliflower - 300 grams
- Egg - 1 large
- Grated Parmesan cheese - 50 grams
- Ground lamb or beef - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Sliced cucumber - for serving
- Sliced tomatoes - for serving
- Lettuce leaves - for serving
Steps
- Preheat your oven to 220°C (425°F).
- Remove the leaves from the cauliflower and cut it into florets. Steam the florets until tender (about 10-12 minutes), then let cool slightly.
- In a food processor, pulse the steamed cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
- In a bowl, combine the cauliflower, egg, and grated Parmesan cheese. Mix until well combined. Spread the mixture onto a parchment-lined baking sheet in two round patties, about 1cm thick.
- Bake the cauliflower crusts in the preheated oven for about 15-20 minutes, or until golden and firm.
- While the crusts are baking, heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until softened (about 3-4 minutes).
- Add the ground lamb or beef to the skillet, breaking it up with a spoon. Stir in the tomato paste, paprika, cumin, salt, and black pepper. Cook until the meat is browned and fully cooked (about 8-10 minutes). Mix in chopped parsley.
- Once the cauliflower crusts are done, remove them from the oven and spoon the meat mixture evenly over each crust.
- Return the burgers to the oven for an additional 5 minutes to heat through.
- Serve the Keto Lahmacun Burgers on lettuce leaves, topped with sliced cucumber and tomatoes.
