Ingredients

  • Almond flour - 100g
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 100g
  • Ground lamb or beef - 200g
  • Onion (finely chopped) - 50g
  • Red bell pepper (finely chopped) - 50g
  • Garlic (minced) - 2 cloves
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a bowl, combine almond flour, egg, and mozzarella cheese. Mix well until a dough forms.
  3. Divide the dough into two equal parts and roll each part into a thin flatbread shape on a parchment-lined baking sheet.
  4. In a skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, sautéing until softened, about 5 minutes.
  5. Add minced garlic and ground meat to the skillet. Cook until the meat is browned, breaking it up with a spatula, about 7-10 minutes.
  6. Stir in tomato paste, paprika, cumin, salt, and black pepper, cooking for an additional 2 minutes until well combined.
  7. Spread the meat mixture evenly over each flatbread, then bake in the preheated oven for 10-12 minutes until the edges are crispy.
  8. Remove from the oven, sprinkle with fresh parsley, slice, and serve hot.
