Ingredients
- Lamb shoulder - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Tomato paste - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini - 2 medium, spiralized
- Chicken broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the lamb shoulder to the pot and brown on all sides for about 5-7 minutes.
- Stir in the tomato paste, cumin powder, paprika, salt, and black pepper, mixing well to coat the lamb.
- Pour in the chicken broth, cover the pot, and reduce the heat to low. Let it simmer for about 60-70 minutes, or until the lamb is tender and easily pulls apart.
- While the lamb is cooking, prepare the spiralized zucchini in a separate pan. Lightly sauté the zucchini noodles in a bit of olive oil for about 3-5 minutes until just tender.
- Once the lamb is ready, shred it with two forks and mix it back into the sauce. Serve the lamb on top of the zucchini noodles, garnished with fresh parsley.
