Ingredients

  • Lamb shoulder - 400 grams
  • Zucchini - 2 medium-sized (about 300 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, diced
  • Tomato paste - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Cut the lamb shoulder into 2-inch cubes and season with salt and black pepper.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the lamb cubes and brown them on all sides for about 8-10 minutes.
  3. Remove the browned lamb and set aside. In the same pot, add the remaining tablespoon of olive oil, then add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  4. Stir in the tomato paste, ground cumin, and paprika, and cook for another 2 minutes.
  5. Return the browned lamb to the pot, add 1 cup of water, cover, and let simmer on low heat for about 60 minutes or until the lamb is tender.
  6. While the lamb is cooking, prepare the zucchini noodles using a spiralizer or a vegetable peeler. Set aside.
  7. Once the lamb is tender, remove it from the pot and shred it with two forks. If the sauce is too thin, simmer uncovered for an additional 10 minutes to thicken.
  8. In a separate pan, briefly sauté the zucchini noodles in a little olive oil for about 3-4 minutes until just tender but still firm.
  9. Serve the shredded lamb over the zucchini noodles and garnish with fresh parsley.
