Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Greek yogurt - 100 grams
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red onion - 1 small, cut into chunks
  • Bell pepper (any color) - 1 small, cut into chunks
  • Fresh parsley - for garnish
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a bowl, mix the olive oil, minced garlic, lemon juice, dried oregano, smoked paprika, salt, and black pepper to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated lamb, red onion, and bell pepper onto the skewers, alternating between the ingredients.
  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. While the skewers are grilling, prepare the yogurt sauce by mixing Greek yogurt with a pinch of salt, lemon juice, and a sprinkle of dried oregano.
  7. Once cooked, remove the skewers from the grill and let them rest for a few minutes.
