Ingredients
- Lamb shoulder - 300 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Greek yogurt - 100 grams
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red onion - 1 small, cut into chunks
- Bell pepper (any color) - 1 small, cut into chunks
- Fresh parsley - for garnish
- Skewers - 4 (soaked in water if wooden)
Steps
- In a bowl, mix the olive oil, minced garlic, lemon juice, dried oregano, smoked paprika, salt, and black pepper to create the marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated lamb, red onion, and bell pepper onto the skewers, alternating between the ingredients.
- Grill the skewers for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- While the skewers are grilling, prepare the yogurt sauce by mixing Greek yogurt with a pinch of salt, lemon juice, and a sprinkle of dried oregano.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes.
