- Lamb shoulder - 300 grams, cut into cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Red bell pepper - 1 medium, chopped
- Zucchini - 1 medium, chopped
- Eggplant - 1 small, diced
- Tomato - 1 medium, chopped
- Vegetable broth - 250 ml
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a large oven-safe pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the lamb cubes. Brown the lamb on all sides, about 5-7 minutes.
- Stir in the chopped red bell pepper, zucchini, eggplant, and tomato. Cook for another 5 minutes, stirring occasionally.
- Add the vegetable broth, tomato paste, cumin, paprika, salt, and black pepper. Mix well to combine all ingredients.
- Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
- Bake for 60 minutes, until the lamb is tender and the flavors have melded together.
- Remove from the oven, garnish with fresh parsley, and serve hot.
