Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1 medium, chopped
  • Zucchini - 1 medium, chopped
  • Eggplant - 1 small, diced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 250 ml
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large oven-safe pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Increase the heat to medium-high and add the lamb cubes. Brown the lamb on all sides, about 5-7 minutes.
  5. Stir in the chopped red bell pepper, zucchini, eggplant, and tomato. Cook for another 5 minutes, stirring occasionally.
  6. Add the vegetable broth, tomato paste, cumin, paprika, salt, and black pepper. Mix well to combine all ingredients.
  7. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
  8. Bake for 60 minutes, until the lamb is tender and the flavors have melded together.
  9. Remove from the oven, garnish with fresh parsley, and serve hot.
