- Dried apricots - 100 grams
- Cream cheese - 50 grams
- Almond flour - 30 grams
- Erythritol (or preferred sweetener) - 15 grams
- Chopped walnuts - 20 grams
- Cinnamon - 1 teaspoon
- Vanilla extract - 1/2 teaspoon
- Unsweetened coconut flakes - 15 grams (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Soak the dried apricots in warm water for about 10 minutes to soften them, then drain and pat them dry.
- In a mixing bowl, combine the cream cheese, almond flour, erythritol, chopped walnuts, cinnamon, and vanilla extract until well blended.
- Carefully open each apricot and fill it with about 1 teaspoon of the cream cheese mixture, pressing gently to close.
- Place the filled apricots on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until the apricots are slightly golden and the filling is warm.
- Remove from the oven and let cool slightly. Sprinkle with unsweetened coconut flakes before serving.
