Ingredients

  • Dried apricots - 100 grams
  • Cream cheese - 50 grams
  • Almond flour - 30 grams
  • Erythritol (or preferred sweetener) - 15 grams
  • Chopped walnuts - 20 grams
  • Cinnamon - 1 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Unsweetened coconut flakes - 15 grams (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Soak the dried apricots in warm water for about 10 minutes to soften them, then drain and pat them dry.
  3. In a mixing bowl, combine the cream cheese, almond flour, erythritol, chopped walnuts, cinnamon, and vanilla extract until well blended.
  4. Carefully open each apricot and fill it with about 1 teaspoon of the cream cheese mixture, pressing gently to close.
  5. Place the filled apricots on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 15-20 minutes, or until the apricots are slightly golden and the filling is warm.
