Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Cooked chicken breast, shredded - 150 grams
  • Greek yogurt - 100 grams
  • Mayonnaise - 1 tablespoon
  • Diced cucumber - 50 grams
  • Chopped parsley - 2 tablespoons
  • Chopped green onion - 2 tablespoons
  • Feta cheese, crumbled - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into florets and toss with olive oil, salt, black pepper, and paprika.
  3. Spread the seasoned cauliflower on a baking sheet and roast for 20 minutes, until golden and tender.
  4. In a mixing bowl, combine the shredded chicken, Greek yogurt, mayonnaise, diced cucumber, chopped parsley, and chopped green onion.
  5. Once the cauliflower is roasted, let it cool slightly and then chop it into smaller pieces.
  6. Add the roasted cauliflower to the chicken mixture and gently mix until well combined.
  7. Serve the salad topped with crumbled feta cheese.
