- Cauliflower - 400 grams
- Butter - 2 tablespoons
- Heavy cream - 100 ml
- Cheddar cheese, grated - 100 grams
- Chicken or vegetable broth - 500 ml
- Garlic, minced - 2 cloves
- Onion, chopped - 1 small
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chives, chopped - for garnish
Steps
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the cauliflower florets to the pot and stir for a few minutes.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat and let it simmer until the cauliflower is tender, about 10-15 minutes.
- Once the cauliflower is tender, use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches.
- Stir in the butter and heavy cream, mixing until well combined.
- Add the grated cheddar cheese and stir until melted and creamy. Season with salt and black pepper to taste.
- Serve hot, garnished with chopped chives.
