Ingredients

  • Cauliflower - 400 grams
  • Butter - 2 tablespoons
  • Heavy cream - 100 ml
  • Cheddar cheese, grated - 100 grams
  • Chicken or vegetable broth - 500 ml
  • Garlic, minced - 2 cloves
  • Onion, chopped - 1 small
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chives, chopped - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  2. Add the cauliflower florets to the pot and stir for a few minutes.
  3. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat and let it simmer until the cauliflower is tender, about 10-15 minutes.
  4. Once the cauliflower is tender, use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches.
  5. Stir in the butter and heavy cream, mixing until well combined.
  6. Add the grated cheddar cheese and stir until melted and creamy. Season with salt and black pepper to taste.
  7. Serve hot, garnished with chopped chives.
