Ingredients

  • Roasted chestnuts - 100 grams
  • Coconut cream - 150 ml
  • Erythritol sweetener - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - a pinch
  • Chopped walnuts - 30 grams (for topping)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a small saucepan, combine the coconut cream, erythritol, vanilla extract, cinnamon, and a pinch of salt. Heat over low to medium heat until the erythritol dissolves and the mixture is warm, stirring occasionally.
  3. While the mixture is heating, peel and chop the roasted chestnuts into small pieces.
  4. Once the coconut cream mixture is ready, remove it from heat and stir in the chopped chestnuts until well coated.
  5. Transfer the mixture into two small ramekins or bowls, smoothing the top with a spatula.
  6. Sprinkle the chopped walnuts evenly over the top of each ramekin.
  7. Bake in the preheated oven for about 15 minutes, or until the tops are golden and slightly crispy.
  8. Remove from the oven and let cool for a few minutes before serving.
