Ingredients
- Roasted chestnuts - 100 grams
- Coconut cream - 150 ml
- Erythritol sweetener - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - a pinch
- Chopped walnuts - 30 grams (for topping)
Steps
- Preheat your oven to 180°C (350°F).
- In a small saucepan, combine the coconut cream, erythritol, vanilla extract, cinnamon, and a pinch of salt. Heat over low to medium heat until the erythritol dissolves and the mixture is warm, stirring occasionally.
- While the mixture is heating, peel and chop the roasted chestnuts into small pieces.
- Once the coconut cream mixture is ready, remove it from heat and stir in the chopped chestnuts until well coated.
- Transfer the mixture into two small ramekins or bowls, smoothing the top with a spatula.
- Sprinkle the chopped walnuts evenly over the top of each ramekin.
- Bake in the preheated oven for about 15 minutes, or until the tops are golden and slightly crispy.
- Remove from the oven and let cool for a few minutes before serving.
