Ingredients
- Beef tripe - 300 grams
- Water - 1.5 liters
- Garlic - 3 cloves, minced
- Vinegar - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Lemon - 1, juiced
- Butter - 1 tablespoon
- Chopped parsley - 2 tablespoons
Steps
- Rinse the beef tripe thoroughly under cold water and cut it into small pieces.
- In a large pot, add the tripe and pour in 1.5 liters of water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer for about 60 minutes, or until the tripe is tender.
- Remove the tripe from the pot and chop it into bite-sized pieces.
- In the same pot, melt the butter over medium heat and add the minced garlic. Sauté until fragrant.
- Add the chopped tripe back to the pot along with the vinegar, salt, black pepper, and paprika. Stir well to combine.
- Pour in an additional 1 liter of water and bring the mixture to a boil again.
- Once boiling, simmer for another 15 minutes to combine the flavors.
- Before serving, stir in the lemon juice and chopped parsley.
