Keto Kelle Paça is a rich and hearty Turkish soup made from lamb trotters, infused with aromatic spices and herbs. This low-carb version retains the traditional flavors while being perfect for those following a ketogenic diet.

Ingredients
- Lamb trotters - 500 grams
- Water - 1.5 liters
- Garlic - 4 cloves, minced
- Onion - 1 medium, chopped
- Bay leaves - 2
- Black peppercorns - 5
- Salt - 1 teaspoon (adjust to taste)
- Olive oil - 1 tablespoon
- Lemon juice - 2 tablespoons
- Chili flakes - 1 teaspoon (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, add the lamb trotters and cover them with 1.5 liters of water. Bring to a boil and then reduce to a simmer for about 10 minutes. Skim off any foam that forms on the surface.
- After 10 minutes, add the chopped onion, minced garlic, bay leaves, black peppercorns, and salt to the pot. Cover and let it simmer for 1.5 to 2 hours until the trotters are tender and the meat is easily pulled away from the bone.
- Once cooked, remove the trotters from the pot and let them cool slightly. Strain the broth into a clean pot, discarding the solids, and return the broth to the stove.
- Add the olive oil and lemon juice to the strained broth. If desired, stir in the chili flakes for an extra kick. Let it simmer for an additional 10 minutes.
- Meanwhile, remove the meat from the trotters, chop it into small pieces, and return it to the pot with the broth. Stir well and heat through for a few minutes.
- Serve hot, garnished with fresh chopped parsley.
