Ingredients
- Dried apricots - 8 pieces
- Walnuts - 30 grams, chopped
- Almonds - 30 grams, chopped
- Erythritol or another keto-friendly sweetener - 2 tablespoons
- Cinnamon powder - 1/2 teaspoon
- Unsweetened coconut flakes - 2 tablespoons
- Butter - 10 grams, melted
- Water - 100 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a small bowl, mix the chopped walnuts, chopped almonds, erythritol, and cinnamon powder.
- Carefully open each dried apricot and stuff it with the nut mixture, pressing gently to close.
- Place the stuffed apricots in a baking dish and drizzle with melted butter.
- Add water to the baking dish, cover it with aluminum foil, and bake for 15 minutes.
- Remove the foil and bake for an additional 10 minutes until the apricots are tender and slightly caramelized.
- Sprinkle coconut flakes over the top before serving.
