Ingredients

  • Dried apricots - 8 pieces
  • Walnuts - 30 grams, chopped
  • Almonds - 30 grams, chopped
  • Erythritol or another keto-friendly sweetener - 2 tablespoons
  • Cinnamon powder - 1/2 teaspoon
  • Unsweetened coconut flakes - 2 tablespoons
  • Butter - 10 grams, melted
  • Water - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, mix the chopped walnuts, chopped almonds, erythritol, and cinnamon powder.
  3. Carefully open each dried apricot and stuff it with the nut mixture, pressing gently to close.
  4. Place the stuffed apricots in a baking dish and drizzle with melted butter.
  5. Add water to the baking dish, cover it with aluminum foil, and bake for 15 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the apricots are tender and slightly caramelized.
  7. Sprinkle coconut flakes over the top before serving.
