  • Erythritol - 40 grams
  • Water - 240 ml
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Chopped walnuts - 30 grams (for garnish)

Steps

  1. In a saucepan, melt the butter over medium heat.
  2. Add the almond flour and coconut flakes to the melted butter, stirring continuously until the mixture is lightly golden and fragrant, about 5-7 minutes.
  3. In another saucepan, bring the water to a boil. Stir in the erythritol, vanilla extract, and a pinch of salt until fully dissolved.
  4. Gradually pour the sweetened water into the toasted almond and coconut mixture, stirring constantly to avoid lumps.
  5. Reduce the heat to low and continue to cook, stirring frequently, until the mixture thickens and pulls away from the sides of the pan, about 10-12 minutes.
  6. Remove from heat and let it cool slightly before shaping into molds or serving bowls.
  7. Garnish with chopped walnuts before serving.
