- Butter - 50 grams
- Erythritol - 40 grams
- Water - 240 ml
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Chopped walnuts - 30 grams (for garnish)
Steps
- In a saucepan, melt the butter over medium heat.
- Add the almond flour and coconut flakes to the melted butter, stirring continuously until the mixture is lightly golden and fragrant, about 5-7 minutes.
- In another saucepan, bring the water to a boil. Stir in the erythritol, vanilla extract, and a pinch of salt until fully dissolved.
- Gradually pour the sweetened water into the toasted almond and coconut mixture, stirring constantly to avoid lumps.
- Reduce the heat to low and continue to cook, stirring frequently, until the mixture thickens and pulls away from the sides of the pan, about 10-12 minutes.
- Remove from heat and let it cool slightly before shaping into molds or serving bowls.
- Garnish with chopped walnuts before serving.
