Ingredients

  • Almond flour - 80 grams
  • Unsweetened coconut milk - 200 ml
  • Butter - 30 grams
  • Erythritol - 30 grams (for pudding)
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Erythritol - 50 grams (for caramel)
  • Butter - 10 grams (for caramel)
  • Heavy cream - 30 ml (for caramel)

Steps

  1. In a saucepan, melt 30 grams of butter over medium heat.
  2. Add 80 grams of almond flour and toast for about 2-3 minutes until lightly golden.
  3. Pour in 200 ml of unsweetened coconut milk and add 30 grams of erythritol, a pinch of salt, and 1 teaspoon of vanilla extract.
  4. Stir continuously until the mixture thickens, about 5-7 minutes.
  5. Once thickened, transfer the mixture into two serving bowls and let it cool at room temperature for about 10 minutes.
  6. For the caramel, in a separate small saucepan, melt 10 grams of butter over medium heat.
  7. Add 50 grams of erythritol and stir until it melts completely.
  8. Slowly pour in 30 ml of heavy cream while continuously stirring until the mixture becomes smooth and caramel-like.
  9. Remove from heat and let it cool slightly before drizzling over the irmik in the serving bowls.
