Ingredients
- Almond flour - 80 grams
- Unsweetened coconut milk - 200 ml
- Butter - 30 grams
- Erythritol - 30 grams (for pudding)
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Erythritol - 50 grams (for caramel)
- Butter - 10 grams (for caramel)
- Heavy cream - 30 ml (for caramel)
Steps
- In a saucepan, melt 30 grams of butter over medium heat.
- Add 80 grams of almond flour and toast for about 2-3 minutes until lightly golden.
- Pour in 200 ml of unsweetened coconut milk and add 30 grams of erythritol, a pinch of salt, and 1 teaspoon of vanilla extract.
- Stir continuously until the mixture thickens, about 5-7 minutes.
- Once thickened, transfer the mixture into two serving bowls and let it cool at room temperature for about 10 minutes.
- For the caramel, in a separate small saucepan, melt 10 grams of butter over medium heat.
- Add 50 grams of erythritol and stir until it melts completely.
- Slowly pour in 30 ml of heavy cream while continuously stirring until the mixture becomes smooth and caramel-like.
- Remove from heat and let it cool slightly before drizzling over the irmik in the serving bowls.
- Serve warm or chilled and enjoy your Keto Karamelli İrmik.
