- Coconut milk - 200 ml
- Almond milk - 100 ml
- Granulated erythritol - 30 g
- Vanilla extract - 1 tsp
- Gelatin powder - 5 g
- Water - 2 tbsp
- Unsweetened cocoa powder - 1 tbsp
- Salt - a pinch
- Butter - 1 tbsp
Steps
- In a small bowl, dissolve the gelatin powder in 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
- In a saucepan, combine coconut milk, almond milk, erythritol, cocoa powder, and a pinch of salt. Heat over medium heat until warm, stirring occasionally to dissolve the erythritol.
- Once the mixture is warm, add the bloomed gelatin and vanilla extract, stirring continuously until the gelatin is fully dissolved.
- Remove the saucepan from heat and stir in the butter until melted and well combined.
- Pour the mixture into two serving cups or ramekins and refrigerate for at least 2 hours or until set.
- Once set, you can optionally drizzle a little melted erythritol caramel sauce on top before serving.
