Ingredients

  • Coconut milk - 200 ml
  • Almond milk - 100 ml
  • Granulated erythritol - 30 g
  • Vanilla extract - 1 tsp
  • Gelatin powder - 5 g
  • Water - 2 tbsp
  • Unsweetened cocoa powder - 1 tbsp
  • Salt - a pinch
  • Butter - 1 tbsp

Steps

  1. In a small bowl, dissolve the gelatin powder in 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
  2. In a saucepan, combine coconut milk, almond milk, erythritol, cocoa powder, and a pinch of salt. Heat over medium heat until warm, stirring occasionally to dissolve the erythritol.
  3. Once the mixture is warm, add the bloomed gelatin and vanilla extract, stirring continuously until the gelatin is fully dissolved.
  4. Remove the saucepan from heat and stir in the butter until melted and well combined.
  5. Pour the mixture into two serving cups or ramekins and refrigerate for at least 2 hours or until set.
  6. Once set, you can optionally drizzle a little melted erythritol caramel sauce on top before serving.
