Ingredients

  • Hazelnuts - 100 grams
  • Butter - 30 grams
  • Erythritol - 40 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Spread the hazelnuts on a baking sheet and roast them in the oven for about 10 minutes, or until they are golden brown and fragrant.
  3. While the hazelnuts are roasting, melt the butter in a medium-sized pan over low heat.
  4. Add the erythritol, vanilla extract, and a pinch of salt to the melted butter, stirring until the erythritol is fully dissolved and the mixture is smooth.
  5. Once the hazelnuts are done roasting, remove them from the oven and add them to the butter mixture, stirring to coat them evenly.
  6. Increase the heat to medium and cook the nut mixture for an additional 3-4 minutes, stirring constantly until the nuts are well caramelized.
  7. Remove from heat and let the mixture cool for a few minutes before transferring it to a serving dish.
  8. Allow to cool completely at room temperature before serving.
